THE GREENWOOD AMERICAN BISTRO
Model Restaurant Group’s inaugural restaurant, The Greenwood American Bistro, was conceived by Grant Rico and Or’el Anbar to highlight the rich biodiversity of the Pacific Northwest through a playful menu and warm dining room, with the goal of bringing guests exceptional dining without the typical ‘fussiness’ of fine dining. The goal of the redesign was to create a space and setting that would let the food and experience shine; this was accomplished through cleaning up the visual field and introducing key new features including a custom monumental ceiling light installation and bespoke, custom-made banquettes that embodied the overall concept of the restaurant - clean and crisp with a dash of grit and whimsy.
